After hearing about all of the health benefits of beets, Oscar and I decided to pick some up on our next shopping trip and start incorporating them into our smoothies. Boy was that a good choice. Not only did we enjoy a sweet new flavor in our breakfast smoothie but it also kept us hydrated and energized throughout the day. Plus its nice to mix things up a bit every now and then.
I’ve never prepared fresh beets but thank goodness for this wonderful tool that’s out there called – YouTube. I watched a 10 minute video presentation to help get me started and then I was on my way. After some online recipe research and a little experimentation, I came up with my own delicious creation:
1/2 cup of carrot orange juice or regular OJ (see photo below)
1/2 cup of Greek yogurt
1/4 cup of beets
handful of chopped mango & strawberries
1 banana (optional)
tbsp of honey
Combine ingredients, hit blend or pulse on your blender and voila! Your supercharged, healthy breakfast is here!
