Mock Tri

Well today was the kick-start to this year’s Loggerhead Triathlon training. It’s a good thing too considering that it’s less than six weeks away.

My friends and I have been trying to train outside since the end of May but the weather has been horrible and the ocean has been rough so it’s been hard to plan anything outside lately (welcome to summer in Florida :P) . I have also been looking at houses with my fiance in the evenings and on weekends so that took up a lot of my spare time as well. However, I am happy to report that my honey and I found a new place that we LOVE and are in the process of closing on our first home on July 26th!!!  I am so excited about it and am keeping my fingers and toes crossed for a smooth closing process. So far so good. I will be sure to keep you all posted on as we get closer to our closing date.

Needless to say, I have been pretty tied up lately and am so happy to have had the time today to do some writing and to get a tri training under my belt for my 2nd sprint triathlon. The first one I did was back September last year (see Tropical Triathlon 2012).

This morning’s mock Tri-run went really well which I am very happy about since I haven’t done one since late September. Me and two other girlfriends who will also be participating met up at 8am for a quarter mile ocean swim, 7 mile bike ride and 1/2 mile run (all back to back). The weather wasn’t too bad it was actually very breezy but the water was a little rough so I had quite a workout swimming through the waves against the current. After the swim, we did a quick run on the shore back to where we started, grabbed our things, got showered and dressed quickly and then got on our bikes for a 7 mile bike ride which included a tall bridge (talk about getting your heart rate up!!) Then we finished with a 1/2 mile run all within an hour!

You’d think we would be tired but we felt great afterwards and happy to be one step closer to accomplishing our goal. Our next mock tri run will be on Thursday the 4th of July and then the real deal is only a month away!! Aahhh!!!

Strawberry Lemon Smoothie

Good afternoon peeps!

I hope everyone is feeling good and enjoying their weekend!

Have you ever been in the middle of something and then all of the sudden a strong and uncontrollable food craving comes over you? Well that’s what happened to me the other day. I was in the middle of a booty beat work-out class when all of this sudden this strong craving for lemon and strawberry came over me and it was all I could think about. I think it might have had something to do with the strawberry-lemon waffles my girlfriends and I had earlier in the week at Bay Bay’s Chicken and Waffles. Bay Bay’s has quickly become one of my favorite places to eat with friends 🙂

The lemon and strawberry in the waffle was sweet and tasty and I think it unlocked something in my taste buds that had me craving more – however something in a healthier and creamier variety. So as soon as I got home, I looked up some lemon-strawberry smoothie recipes online and then got to work in the kitchen. I ended up making some changes and modifications to the recipes and came up with my own concoction below. The result was sweet, smooth, creamy, berry-citrusy goodness that was only 212 calories that can be enjoyed for breakfast or as a dessert.


  • 1/2 cup of unsweetened almond milk or coconut milk
  • 1/2 cup of fat free Greek yogurt
  • sliced strawberries
  • fresh squeezed lemon juice and some lemon zest
  • 1/2 frozen banana
  • tbsp of chia seeds

I have been experimenting with my smoothies lately by using different ingredients that I don’t normally use such as: cucumber and radishes. I also want to start using papaya, apricot, apple, carrot and pomegranate.  I will keep you posted and share them with you in case you’re looking to try something new. And please feel free to share any smoothie recipes with me as well 🙂
